dc.description.abstractEste documento proporcionó información pertinente sobre la importancia económica de la industria azucarera en el Ecuador. Es necesario destacar que la caña de azúcar se cultiva para la producción de azúcar industrializada principalmente, sin embargo, también se utiliza como materia prima para abonos, alimento animal, fabricación de papel y bebidas alcohólicas destiladas, constituyéndose así, como generador de fuente de ingresos para las familias ecuatorianas, sea porque son productores o a su vez prestan la mano de obra para efectuar las labores que la industria requiere. Por lo detallado se concluyó que en el Ecuador, el cultivo de caña de azúcar se cultiva en las provincias del Guayas, Imbabura, Loja y Cañar, durante los meses de junio a diciembre, cuya materia prima es el principal componente de la industria azucarera del país; la industria azucarera es un importante sector agrícola del país, dedicado a la siembra cosecha y procesado de la caña de azúcar, generando fuente de empleo a las personas que viven en sectores aledaños a las industrias, lo que permite mejorar la calidad de vida de muchas familias; el proceso para la obtención de azúcar es el siguiente: corte de la caña (consiste en romper o desfibra las celdas de los tallos), posteriormente con cintas transportadoras se conducen a los molinos donde se realiza el proceso de extracción de sacarosa mediante la generación de vapor, calentamiento, clarificación, filtración, evaporación, cristalización, evaporado, secado del producto y finalmente almacenamiento.
